Roasted Yukon Gold or Red Potatoes

Wash the desired amount of potatoes in cold water. Cut into quarters and place in a greased casserole dish or on a greased, foil-lined baking sheet. Drizzle with olive oil and toss to coat. Sprinkle with sea salt. Bake in a 400 degree oven until fork tender. The balsamic sauce is really good as a "gravy" on the potatoes. Serve with steamed veggies.
